Stir fried greens

I have finally figured out how to get my husband to eat his vegetables – make these stir fried greens! I baked salmon for dinner this evening and served it alongside stir fried pak choy, snow peas and broccolini and do you know what he said to me as I placed his plate in front of him? “Oh, they’re my favourite!” I couldn’t believe my ears. They must be good, if those words came out of his mouth in reference to vegetables.

Now, it’s with slight hesitation that I call what’s to follow a ‘recipe’. I mean, it’s a few vegetables tossed with some seasoning over heat. I can hardly claim genius status for having thought to throw these ingredients together in a fry pan. But maybe it’ll spice up your vegetable consumption, and perhaps entice those in your household for whom vegetables are akin to the Plague, to give them a go. The addition of sesame oil is probably what makes this dish. I have professed my love for sesame oil previously on this blog. It’s amazing how one simple ingredient can transform the flavour of an entire dish.

These stir fried greens make a great accompaniment to any meat dish. My favourite way to serve it is alongside a salmon fillet, or a chicken schnitzel. But for my non- meat eating friends, a big pile of these veggies is a meal in itself. And it’s one of the quickest meals you’ll ever make. Once your greens are prepped and your fry pan is hot, you’ll go from pan to plate in about 3 minutes.

These stir fried greens are best eaten when they’re fresh. This recipe serves 2 as a side.

Stir fried greens

1 bunch pak choy, leaves separated and rinsed well

200g snow peas, ends trimmed

1 bunch broccolini, blanched, ends trimmed

1 tbsp sesame oil

Pinch salt

2 tsp sesame seeds

  1. Prepare the greens and chop the pak choy leaves in half.
  2. Heat the fry pan on high heat and then add in the greens.
  3. Add sesame oil, salt and sesame seeds and toss together for 2 minutes until the greens are crisp and bright.
  4. Remove from heat and serve immediately.
