Has anyone else noticed that platters and boards of all sorts are having a moment right now? I can’t scroll through my Instagram feed without seeing at least a few proud platters gracing friends’ tables, filled with all sorts of goodness. And I’m not complaining!
I never used to be a platter lover. I was not into dips, or cold meats, or cheeses. I’m still not into cheeses (I know, I’m odd, and this puts me into a category with about 0.5% of the population) but put an antipasto platter in front of me, and I will devour it. An antipasto platter is such a simple way to entertain friends – no cooking required and your guests will still leave with a full stomach. I have made one of these bad boys the past few times we’ve had people over for dinner, and accompanied by a bottle of wine, it’s a real hit. And I don’t have to spend hours standing over a hot stove. Win win!
There are a few must-haves that I would recommend you include on an antipasto platter, but it’s entirely up to you how you create one of these boards. My suggestions are:
- Bread sticks or crostini
- A selection of dips (my favourites are beetroot and hommus)
- Olives (you MUST have olives)
- Marinated feta cheese
- Sundried or lightly roasted tomatoes
- Prosciutto
Some people also like to add fresh fruit such as grapes or figs, or vegetable sticks. Think carrots and cucumber. You could also add additional types of cheeses and meats, depending on the preference of those you’re serving. My point is, an antipasto platter is so versatile and there’s no right or wrong way to create one. Take a browse through the deli section of your supermarket, and let your imagination run wild.
